For the cake base
1 cup flour
4 Tbsps butter
1 egg
2 ½ Tbsps sugar
½ tsp vanilla extract
For the filling
2 cups fresh Strawberries (washed, hulled and dry)
¾ cup sugar
2 packets white gelatin
4 Tbsps Apple juice
1 cup plain, low-fat Yogurt
1 Tbsp Orange liqueur
1 ½ cups heavy cream
For decoration
16 halved Strawberries (washed and intact)
1 cup blanched almonds (chopped)

Preparation steps

Preheat oven to 400 F. Prepare 10" springform pan by greasing the bottom with butter and lightly sprinkling with flour to coat. In mixing bowl combine the flour, sugar and vanilla. Add the egg and small pieces of butter working the mixture quickly into a dough. Wrap in plastic wrap and leave to rest for 30 minutes. Roll dough out onto floured work surface and work into a 10 "circle. Place circle into bottom of pan, trimming if necessary. Bake for approximately 15 minutes or until golden brown. Remove from oven and allow to cool.

For the filling prepare gelatin according to package directions. Arrange half of the strawberries on top of the prepared and cooled cake base. In blender, puree other half of strawberries then force through cheesecloth or sieve leaving seeds. In saucepan heat apple juice, sugar and gelatin until sugar dissolves. In mixing bowl combine seedless strawberry puree, yogurt, orange liqueur and gelatin mixture. In separate bowl whip cream until stiff. Gently fold whipped cream into strawberry mixture. Spread on top of pastry and strawberry base, smoothing the top and chill for at least 4 hours.

To decorate, remove the ring from around the cake. Press chopped almonds into sides and top of cake. Top with strawberry halves.
