500 grams white Asparagus

1 tsp sugar
300 grams Snow peas
1 garlic clove
500 grams King prawn (ready to cook, deveined and peeled down to the tail segment)
salt

2 Tbsps vegetable oil
1 tsp freshly grated ginger
freshly ground peppers
cilantro (for garnish)

Preparation steps

1.

Peel asparagus and cut diagonally into 1 cm (approximately 1/2 inch) thick slices. Blanch in a pot of boiling salt water with sugar for about 10 minutes until al dente. Rinse snow peas, trim and add to the pot with asparagus for the last 2 minutes of the cooking time.

Peel garlic and chop finely. Rinse prawns, pat dry and season with salt and pepper. Heat oil in a large pan and fry prawns with garlic and ginger for 2-3 minutes until golden brown. Add drained vegetables to the pan, fry together while stirring for 1-2 minutes and season with salt and pepper.

Serve on plates garnished with cilantro.
