Preparation steps

1.

Rinse the soybeans in a bowl, cover and cook in microwave oven on 850 watts for about 5 minutes. Optionally, cook in a pan with water for 10-15 minutes.

2.

Rinse and dry the lemon balm leaves. Coarsely puree the soybeans (reserving some for garnish) with the lemon balm. Season with salt and pepper. Add 4 tablespoons olive oil and lemon juice to puree. Peel garlic, squeeze through a press into the mixture and stir thoroughly. Adjust seasoning as necessary.

3.

Put soybean puree in a bowl.

4.

Rinse fish fillets, pat dry, sprinkle with 2 tablespoons lemon juice and season with salt and pepper.

5.

Rinse chile peppers, cut lengthwise and chop finely.

6.

Put the pieces of fish in a bowl and spread chile peppers on fish. Cover the fish with 250 ml (approximately 1 cup) of water and cook in microwave at 850 watts for about 7 minutes. Optionally, simmer in a covered pot over low heat about 10 minutes. Puree soybeans until smooth. To serve, top the soybean puree with the fish, drizzle with oil and serve sprinkled with reserved soybeans.
