Preparation steps

1.

Grease 4 refractory molds with butter and sprinkle with breadcrumbs.

Whisk 2 eggs with milk and the grated cheese, and season with salt, pepper and nutmeg. Divide the whisked egg mixture equally into the molds. Break 1 egg into each mold and season with a little salt. Place the molds in a shallow, wide pot of hot water. Bring to a boil, cover the pot with lid and let the eggs cook for about 10 minutes.

Serve the steamed in the ramekins (with herb sauce or parsley potatoes and salad).
