- 250 grams Napa cabbage
- 250 grams Pork tenderloin
- 250 grams shrimp (ready to cook, peeled)
- 4 egg whites
- 20 grams cornstarch
- salt
- freshly ground peppers
- 2 ½ Tbsps Rice wine
- 250 milliliters Chicken broth
- 2 Tbsps scallions

Preparation steps
1.
Grind pork and shrimp finely, successively, in a grinder. Combine both and season with salt, pepper and rice wine.

Rinse cabbage leaves and cut thick veins flat. Halve leaves lengthwise.
3.
Bring a pot of water to boil. Blanch cabbage for about 1 minute. Rinse in cold water and drain well, arrange on a plate.
4.
Whisk egg whites with cornstarch and add to meat mixture. Pour chicken broth in a pot with steamer. Stuff cabbage leaves with the meat mixture lengthwise and arrange in a steamer (meat mixture up). Steam for about 10-15 minutes. Arrange stuffed leaves on plates and sprinkle with remaining broth from the pot. Sprinkle with chopped chile peppers and serve.
