250 grams starchy potatoes
1 egg yolk
2 Tbsps butter
1 Tbsp freshly grated Parmesan
1 Tbsp freshly chopped parsley
1 Tbsp scallions

4 Steak fillet (each about 150 grams)
1 Tbsp vegetable oil
2 carrots
200 grams Snow peas
5 Tbsps Vegetable broth

Preparation steps

Scrub potatoes thoroughly and cook in a pot of boiling salted water until knife0tender, about 20 minutes. Drain and rinse in cold water, then drain again. Peel and press through a ricer. Mix with egg yolk, 1 tablespoon butter, Parmesan and herbs. Season with salt and pepper.

Preheat oven to 180°C (approximately 350°F).

Rinse steaks, pat dry and season with salt and pepper. Sear on both sides in hot oil in a pan and place on oven rack over a drip pan. Spread potato topping on top and bake until golden brown, about 10 minutes.

Rinse carrots and snow peas. Peel and slice carrots and saute along with snow peas briefly in remaining butter. Deglaze with a little broth. Cover and cook until tender, about 2-3 minutes. Season with salt and pepper and distribute on plates. Top with steaks and serve.
