1 handful parsley
350 grams mixed Mushrooms (such as button mushrooms, shiitake, oyster mushrooms)
200 grams Cherry tomatoes
2 Tbsps Canola oil
freshly ground peppers
Sea salt
4 Steak fillet (each 150-200 grams)
100 milliliters Beef broth

Preparation steps

Preheat the oven to 100°C (approximately 210°F).

Trim the mushrooms and cut into smaller pieces as needed. Rinse the tomatoes and drain.

Heat the oil in a pan and fry steaks on both sides for about 2 minutes (depending on thickness of meat and preference). Season with salt and pepper. Then wrap in aluminum foil and let it rest for about 10 minutes in the preheated oven. Add the mushrooms and tomatoes to the pan and pan fry for about 5 minutes. Deglaze with a bit of broth and simmer 2-3 minutes.

Arrange steaks with tomatoes and mushrooms on plates. Serve drizzled with the sauce. If desired, serve with sweet potatoes.
