- 250 grams Pastry flour
- 150 grams butter
- 100 grams sugar
- 1 packet Vanilla sugar
- 100 grams ground almonds
- 2 eggs
- 1 generous pinch cinnamon
- 1 pinch salt
- Anise seed
- allspice
- cilantro
- Mace
- 100 grams planed almonds
- milk (for drawing brushes)
- 100 grams Milk chocolate couveture (for decoration)

Preparation steps

Preheat oven to 200°C (approximately 400°F). Combine flour, butter, sugar, vanilla sugar, ground almonds, eggs and spices and knead to a smooth dough. Wrap in aluminum foil and refrigerate 1 hour. Roll out dough 2 to 3 mm (approximately 1/8 inch) thick. Press with Speculaas forms or cut out any shapes.

Place cookies on a baking sheet lined with parchment paper and sprinkle with flaked almonds, press down slightly and if needed, chill again briefly. Brush top of cookies with milk, place in oven and bake 10 to 12 minutes. Coarsely chop chocolate and melt in a bowl over a pot of hot (not boiling) water. Then spoon into a freezer bag, cut off the tip and decorate cookies with the chocolate. Allow chocolate to dry and serve.
