- 500 grams Spinach
- 3 Tbsps Pine nuts
- 2 Tbsps raisins
- 1 Tbsp White vinegar
- 2 Tbsps lemon juice
- 3 Tbsps olive oil
- 1 tsp Pumpkin seed oil
- salt
- freshly ground peppers
- 50 grams Italian Bacon (such as prosciutto)

Preparation steps

For the salad: Rinse the spinach and spin dry.
2.
Soak the raisins in a bowl of warm water.
3.
Toast the pine nuts in a dry skillet until golden and fragrant.
4.
For the dressing: In a bowl, whisk the vinegar with the lemon juice, and season with salt and pepper to taste. Whisk in the oil until thoroughly emulsified.
5.
For serving: Toss the spinach with the raisins and pine nuts in a bowl. Add the dressing and toss until combined. Divide the spinach mixture between plates and top with the Italian bacon. Serve immediately.
