4 slices Goat cheese (about 100 g)
12 slices Bacon
4 slices Baguette
1 Tbsp honey
juice of lemons
4 Tbsps olive oil
2 Tbsps Pine nuts
salt
freshly ground peppers

Preparation steps

1.

Rinse spinach, remove any stems and pat dry.

2.

Drizzle goat cheese with 1 tablespoon of the olive oil and place under broiler 2-3 minutes until golden brown. Toast the baguette slices 1 minute per side until golden brown.

Fry bacon in an uncoated pan until crispy. Drain on paper towels.

4.

Mix honey, lemon juice, pine nuts and remaining olive oil. Season with salt and pepper.

5.

Arrange baguette slices on a plate, top with spinach, goat cheese and bacon. Drizzle with dressing and immediately serve.
