450 grams Puff pastry dough (frozen)
300 grams baby Spinach
1 shallot
1 garlic clove
olive oil
salt
freshly ground peppers
freshly grated Nutmeg
150 grams Feta
Pastry flour (for dusting)
1 egg (separated)
5 Tbsps Sesame seeds

Preparation steps

Thaw puff pastry, according to package directions.

Preheat oven to 200°C (approximately 400°F).

For the filling, rinse and trim spinach and spin dry. Peel and mince shallot and garlic. Add 2 tablespoons oil to pan and sautee garlic and shallot until translucent. Add spinach and season with salt and pepper and a pinch of nutmeg. Remove from heat. Crumble feta over spinach mixture.

Roll out puff pastry on a floured surface and cut out circles (each approximately 7 cm or 2.75 inches diameter). For each, place spinach filling in center of circle and spread from center. Sprinkle with feta and brush the edges with egg white. Fold circles into crescents and seal by pressing the edges closed. Place on a lined baking sheet. Brush with egg yolk and sprinkle with sesame seeds. Bake for 25-30 minutes until golden. Remove and let cool. Serve lukewarm.
