28 ozs boned Pork legs (trimmed of fat and cubed)
3 Tbsps vegetable oil
1 large onion (chopped)
2 cloves garlic cloves (finely chopped)
1 red chili pepper (deseeded and very finely chopped)
fresh ginger (peeled and grated)
½ tsp Coriander
½ tsp Turmeric powder
½ tsp ground cloves
½ tsp Cumin powder
2 cups canned Tomatoes (chopped)
cup Yogurt
2 Tbsps parsley

1 Pot, 1 Skillet, 1 Measuring cups, 1 Cutting board, 1 Tablespoon, 1 Wooden spoon, 1 Peeler, 1 Sieve, 1 Small knife, 1 Large knife

Preparation steps

1.
Wash the pork and pat dry with kitchen paper.
2.
Heat the oil in a wide pan and sear the meat on all sides until golden brown. Remove the meat from the pan and keep warm.
3.
Add the onions to the pan, cook until softened but not brown then stir in the garlic, chile, ginger, coriander, turmeric, cloves and cumin.
4.
Cook the spices for 2 minutes then return the meat to the pan with the tomatoes and yoghurt.
5.
Season with salt and pepper then bring to a simmer and cook very gently for about 45 minutes or until the meat is tender. Add a little water during cooking if the dish looks too dry.
6.
Serve scattered with the parsley and boiled rice alongside.
