- ⅓ cup olive oil
- ⅓ cup piri piri pepper sauce
- 1 clove garlic cloves (minced)
- 1 red chili pepper (sliced)
- 2 inches Lemongrass (finely sliced)
- 35 ozs fillet Pork belly (trimmed)
- 4 gluten-free Tortillas
- 2 cups mixed salad
- salt
- freshly ground Black pepper

Preparation steps
1.
Preheat the oven to 180°C(160° fan)|350F|gas 4.
2.
Whisk together the olive oil, peri peri sauce, garlic, and seasoning in a small mixing bowl. Smear over the pork belly and sit in a roasting dish. Season with more salt and pepper.
3.
Cover with aluminium foil and roast for 1 hour. Remove the foil and roast uncovered for a further 30-35 minutes until golden brown on top.
4.
Remove from the oven and leave to rest, covered loosely, for at least 10 minutes.
5.
Serve the pork with salad leaves and tortillas on the side, garnished with chilli and lemongrass on top.
