- 1 Grapefruit
- 1 Blood orange
- 1 organic lemon
- 300 milliliters Wine vinegar
- 100 milliliters Rum
- 200 grams sugar
- 4 cloves
- 1 tsp mixed peppercorns
- 4 allspice
- 2 Star anise

Preparation steps

Rinse and halve the peaches. Remove the stones and thinly slice. Peel the grapefruit and blood orange, making sure to remove all of the bitter white pith. Remove the whole fruit segments. Rinse the lemon in hot water, pat dry, and cut into wedges. Mix the lemon, grapefruit, blood orange, and peaches. Divide the fruit mixture into the prepared jars.

Bring the vinegar, rum, 200 ml (approximately 7 ounces) of water, sugar, cloves, peppercorns, allspice berries, and star anise to a boil. Pour over the fruit, making sure that it is covered. Seal tightly, then cool completely in a dark, cool place. Let infuse for 2 weeks before using.
