- 3 cups large, red chili peppers (finely sliced)
- 1 cup white wine vinegar
- ⅛ cup dry white wine
- 4 bay leaves
- 3 Juniper Berry
- 1 tsp chopped, dried oregano
- 1 tsp black peppercorns
- 1 pinch salt
- 1.333 cups Goat cheese
- ⅔ cup Olives (in oil)
- extra virgin olive oil
Preparation steps

Cut the tops off the chillies with a sharp knife. Carefully remove the seeds and ribs.

Put the vinegar and wine in a pan with the spices, herbs and salt and bring to a boil. Add the chillies and boil gently for 3 minutes. Drain (reserve the bay leaves, juniper berries and peppercorns) and place the chillies upside down on a cloth to dry overnight.

Beat the cheese until soft and spoon into the chillies with a teaspoon, pressing in the cheese to expel any air pockets.

Pack the chillies, reserved spices and bay leaves and olives into cold sterilised jars and pour in the oil to cover completely. Cover loosely and leave to stand for a few hours. The chillies will absorb some of the oil and you will need to add more. Seal the jars tightly.
