- 3 Tbsps olive oil
- 4 red peppers (halved lengthwise and seeded)
- 1 cup cooked Rice
- 1 carrot (peeled and coarsely grated)
- ⅔ cup Cocktail tomatoes (halved)
- ⅔ cup Feta (crumbled)
- 2 Tbsps freshly chopped Basil
- 2 cups fresh, white breadcrumbs (approx.)
- salt
- freshly ground peppers

1 Pot, 1 Baking sheet, 1 Bowl, 2 Small bowls, 1 Plate, 1 Measuring cups, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Teaspoon, 1 Fine-mesh sieve, 4 small molds (à 150 ml Inhalt)
Preparation steps

Heat the oven to 180°C (160° fan) 350F, gas 4.

Grease a baking dish with 1 tbsp of oil.

Place the rice in a large bowl. Mix in the tomatoes, carrot, crumbled feta and basil and season with salt and pepper.

Spoon the filling into the pepper halves and place in the baking dish. Scatter with breadcrumbs, drizzle with the remaining oil and bake in the oven for 30 minutes until golden brown.
