4 cups Sirloin steak (cut into thin strips)
3 Tbsps dark soy sauce
1 Tbsp Fish sauce
3 Tbsps sesame oil
4 cups Green beans (trimmed)
2 inches fresh ginger (peeled and minced)
1 red chili pepper (cut into strips)
1 stalk Lemongrass
1 ½ cups Beef stock
2 medium Eggplant (peeled and diced)
cilantro (chopped)
1 Lime
salt
freshly ground Black pepper

Preparation steps

1.
Marinate the meat with soy sauce and fish sauce.
2.
Heat the sesame oil in a wok or frying pan and gently cook the beans, ginger, chilli, and lemongrass.
3.
Add the stock, aubergine, and steak with its marinade. Stir well and pour into a slow cooker.
4.
Cover with a lid and cook on a medium setting for 3 hours until the beef is tender.
5.
Stir through the coriander and season to taste.
6.
Serve on plates and grate over some lime zest before serving.
