- 4 cups Sirloin steak (cut into thin strips)
- 3 Tbsps dark soy sauce
- 1 Tbsp Fish sauce
- 3 Tbsps sesame oil
- 4 cups Green beans (trimmed)
- 2 inches fresh ginger (peeled and minced)
- 1 red chili pepper (cut into strips)
- 1 stalk Lemongrass
- 1 ½ cups Beef stock
- 2 medium Eggplant (peeled and diced)
- cilantro (chopped)
- 1 Lime
- salt
- freshly ground Black pepper

Preparation steps
1.
Marinate the meat with soy sauce and fish sauce.
2.
Heat the sesame oil in a wok or frying pan and gently cook the beans, ginger, chilli, and lemongrass.
3.
Add the stock, aubergine, and steak with its marinade. Stir well and pour into a slow cooker.
4.
Cover with a lid and cook on a medium setting for 3 hours until the beef is tender.
5.
Stir through the coriander and season to taste.
6.
Serve on plates and grate over some lime zest before serving.
