- 1 Tbsp sesame oil
- 1 shallot (finely chopped)
- ⅛ cup fresh ginger (finely chopped)
- 1 tsp Cumin powder
- 3 ½ cups Beets (roughly diced)
- 2 cups vegetable stock
- 6 ozs low fat Coconut milk
- 1 Lime (juiced)
- brown sugar
- cayenne pepper
- 3 sprigs mint (chopped)

Preparation steps
1.
Heat the oil and fry the shallot and ginger until translucent. Add the cumin and fry for 1-2 minutes, then add the beetroot and fry briefly. Add the stock and approx. 5 ounces coconut milk. Cover and simmer gently for approx. 25 minutes.

Add the lime juice and blend to a fine purée, adding more stock if needed. Season with salt, sugar and cayenne - it should have a slight kick.
3.
Divide the soup between bowls and garnish with drops of coconut milk and the mint.
