4 shallots
1 red chili pepper
20 grams ginger
400 grams Pumpkin
100 grams brown sugar
50 milliliters White vinegar
6 cloves
40 grams raisins
1 generous pinch Nutmeg (freshly grated)
½ tsp salt

Preparation steps

1.

Peel and julienne the shallots. Rinse, trim, and thinly slice the chili pepper. Peel the ginger, and finely grate. Cut the pumpkin into cubes.

Add all the ingredients to a pot, and bring to a boil. Reduce the heat to low, and simmer for 8-10 minutes. Stir occasionally to keep the chutney from burning.

3.

Fill the prepared screw-top jars to the brim with the chutney. Seal tightly, and turn upside down to cool for 10 minutes. Turn right side up and cool completely. Let infuse for 3 weeks before serving.
