2000 grams Pumpkin (peeled, seedless)
800 grams sugar
500 milliliters apple cider vinegar
150 milliliters Apple juice
1 lemon
50 grams fresh ginger
2 Cinnamon stick
2 Star anise
10 cloves

Preparation steps

1.

Cut pumpkin into cubes. Combine sugar, vinegar, apple juice and lemon juice in a large saucepan.

2.

Peel ginger, grate finely and add to pan. Add  all spices.Bring to a boil. Add diced pumpkin and cook for about 25 minutes. Pour hot chutney into prepared preserving jars and seal well.
