- 500 grams mussels
- 250 grams Tomatoes (skinned, seeded and diced)
- 200 grams green Beans
- 3 shallots (chopped)
- 2 garlic cloves
- ½ tsp Turmeric
- ½ tsp ground paprika
- 5 Coriander
- 2 cloves
- 3 allspice
- 2 Cardamom
- ⅓ Cinnamon stick
- ½ tsp Nutmeg (freshly grated)
- 3 Tbsps olive oil
- 160 grams Basmati rice
- 350 milliliters Vegetable broth
- salt
- freshly ground peppers
- parsley (Depending chopped 1 tbsp)
- cilantro (Depending chopped 1 tbsp)

Preparation steps

Clean mussels thoroughly and remove the beards.
2.
Place all the coriander seeds, cloves, allspice berries, cardamom and cinnamon sticks in a mortar and finely crush. Crush the garlic through a garlic press. Heat oil in a pan and sauté shallots, crushed garlic, all the spices and the tomato cubes and sauté briefly. Add the broth and the washed rice, bring to a boil, reduce to a simmer, cover and cook about 5 minutes. Add the mussels and beans and cook until the rice is tender, about 15 minutes longer. Remove from the heat and let stand 10 minutes. Season with salt and pepper and with a fork, stir in the herbs.
