- 1 medium sized onion
- 4 Tbsps butter
- 2 Tbsps Pastry flour
- 600 milliliters Vegetable broth
- 200 grams Peanut butter
- 200 milliliters Whipped cream (at least 30% fat content)
- salt
- freshly ground peppers
- 1 Tbsp lemon juice
- 300 grams cooked Rice
- 2 Tbsps peeled, chopped Peanuts
- 1 tsp freshly chopped parsley

Preparation steps

Peel the onion and cut into small cubes. Heat the butter in a saucepan and cook the onion until translucent. Sprinkle the flour over the onion and saute until the onion is well coated. Stirring constantly, gradually add the broth, Stir in the peanut butter and simmer over low heat, stirring occasionally until the soup is lightly thickened, about 10 minutes.

Add the cream and the rice to the soup and simmer until heated through. Season the soup with salt, pepper and a little lemon juice and sprinkle with chopped peanuts. Serve garnished with parsley.
