- For the cake
- ½ cup dark honey
- ½ cup strong, black Coffee
- ½ cup unsalted butter
- ½ tsp ground cinnamon
- ¼ tsp ground cloves
- ½ tsp grated Nutmeg
- 2 large eggs
- ½ cup dark brown sugar
- 1 ½ tsps Baking powder
- 2 cups all-purpose flour
- ½ cup Golden raisins
- 1 cup chopped almonds
- For the coating
- 6 ozs Dark chocolate (70% cocoa solids)

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 1kg|2lb loaf tin.
2.
Heat the honey, coffee, butter and spices in a pan. Bring to a boil and remove from the heat. Cool until warm.
3.
Beat together the eggs, sugar and baking powder in a mixing bowl. Slowly add the warm liquid, beating constantly. Add the flour, sultanas and almonds and mix well.
4.
Pour the mixture into the tin and bake for 45-55 minutes until browned and cooked through. Cool in the tin for 15 minutes, then place on a wire rack to cool completely.
5.
For the coating: melt the chocolate in a heatproof bowl over a pan of simmering (not boiling) water. Allow to cool and thicken slightly.
6.
Spread the chocolate over the cake and leave to set.
