- 8 dried Apricot
- 4 Dried Plum
- 1 onion (diced)
- 2 cloves garlic cloves (chopped)
- 2 Tbsps clarified butter
- 8 ozs chicken (diced)
- ½ tsp Cumin powder
- ½ tsp Coriander
- ⅜ cup chicken stock
- 2 Tbsps honey
- 8 sheets Filo dough
- 3 Tbsps melted butter
- paprika
- chopped Pistachio (to garnish)

Preparation steps
1.
Soften the apricots and the plums in water. Drain and chop.

Fry the onion and garlic in the clarified butter for a few minutes. Add the chicken and fry for another few minutes, then add the fruit and season with salt, ground black pepper, cumin, and coriander. Deglaze with the stock and stir in the honey. Simmer on a low temperature for around 15 minutes, stirring occasionally.

Heat the oven to 200°C / 400°F, and line a baking tray with greaseproof paper.

Brush the pastry sheets with butter on one side and sprinkle with paprika. Cut into 3" wide strips. Place the chicken mixture on the bottom end of the pastry strips and fold the pastry diagonally over it to create triangles. Do this until all the pastry has been filled.
5.
Place on the prepared baking tray and bake for 10-15 minutes. Serve garnished with pistachio nuts.
