- 1 ¾ cups gluten-free self-rising flour
- ½ cup light brown sugar

- 2 Tbsps sunflower oil

Preparation steps
1.
Place the fruit in a bowl and pour over the hot tea and rum. Mix well, cover the bowl and leave to stand overnight.
2.
Heat the oven to 170°C (150° fan) 325°F gas 3. Grease a 500g|1lb loaf tin and line the base with non-stick baking paper.
3.
Put the flour into a mixing bowl and stir in the sugar and mixed spice.
4.
Add the egg and sunflower oil to the fruit mixture and mix into the dry ingredients until well blended.
5.
Spoon into the tin and level the surface.
6.
Bake the cake for about 60 minutes, until risen and just firm to the touch in the centre. Cool in the tin for 10 minutes, then place on a wire rack to cool completely.
