Mix together all the ingredients for the marinade in a mixing bowl. Add the chicken, mix well, then cover and chill for at least 1 hour.
Preheat the oven to 200°C (180 fan) | 400°F | gas 6.
Tip the chicken and marinade into a foil-lined roasting tin and roast for 25-30 minutes until the chicken is dark gold and cooked through. Serve with a fresh green salad.
