2 cups Cocktail tomatoes (halved if desired)
8 Tbsps olive oil
2 cups chickpeas (tin; drained and rinsed)
1 clove garlic cloves (chopped)
2 Tbsps Tahini (from a jar)
1 Tbsp lemon juice
1 tsp paprika (sweet)
Cumin powder
1 handful Basil (4 leaves sliced)
8 slices Ciabatta
shaved Parmesan (to garnish)

Preparation steps

1.
Preheat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.

Put the tomatoes in an oven-proof dish. Mix with salt and 3 tbsp olive oil and roast for 15-20 minutes, until they split.

Using a stick blender, blend the chickpeas to a fine purée. Finely grind the garlic with a little salt and add to the chickpeas, together with the tahini, lemon juice, paprika, cumin and oil. Mix to a smooth, creamy texture. Add the sliced basil leaves and season to taste with salt.
4.
Take the tomatoes out of the oven and switch the oven to grill function. Grill the ciabatta slices for 4-5 minutes.
5.
Top the toasted ciabatta with houmous and garnish with parmesan. Put the tomatoes to one side and sprinkle coarse sea salt over the dish. Serve garnished with the remaining basil.
