Spice Cake

- 80 grams dark Chocolate
- 4 eggs
- 180 grams butter
- 200 grams sugar
- salt
- 400 grams Pastry flour
- 4 Tbsps Cocoa
- ½ tsp ground cinnamon
- ½ tsp ground cloves
- 1 pinch ground allspice
- 1 pinch ground Anise seed
- 2 ½ tsps Baking powder
- 5 Tbsps Whipped cream
- 4 Tbsps Apricot jam
Preparation steps
Preheat the oven to 180°C (approximately 350°F). Grease the cake pan with butter.
Coarsely chop the chocolate and melt in a double boiler. Remove from heat and let cool.
Separate the eggs. Beat the butter and sugar together until creamy. Add the egg yolks, one at a time, then the heavy cream. Mix the flour with the salt, cocoa, spices and baking powder. Stir the flour into the egg yolk mixture and mix until just combined. Whip the egg whites until stiff and gently fold into the batter. Pour the batter into the prepared cake pan and bake for 50 minutes, until a toothpick inserted comes out clean.
Remove the cake from the oven and allow to cool slightly. Carefully remove the cake from the pan and brush with apricot jam. Let cool completely on a wire rack.
