- 14 ozs Spaghetti
- 1 bunch parsley (leaves only)
- 2 cloves garlic cloves (chopped)
- ¾ cup Walnut (toasted)
- 1 cup grated vegan cheese (grated)
- ⅜ cup extra virgin olive oil
- salt
- 3 ½ ozs Spinach
- To garnish
- chopped Walnut

Preparation steps
1.
Cook the spaghetti in boiling, salted water until 'al dente'.
2.
Put the parsley, garlic and walnuts in a blender or food processor and process until smooth.
3.
Stir in the cheese and 80ml|3 fl oz olive oil and season with salt.
4.
Heat the remaining oil and gently cook the spinach leaves until wilted.
5.
Drain the spaghetti and toss in the spinach and pesto. Sprinkle chopped walnuts over the top and serve.
