350 grams Spaghetti
80 grams Smoked bacon
1 onion
1 garlic clove
1 bunch Soup vegetables
3 Tbsps olive oil
850 grams Tomatoes (canned)
2 sprigs of thyme and rosemary
100 grams Parmesan (piece)

Preparation steps

1.

Peel and finely dice the onion and garlic. Finely dice the bacon. Rinse and finely dice the soup vegetables. Heat the oil, and sauté all the preparted ingredients. Cut the tomatoes into smaller pieces, then add to the pan.

Remove the leaves from the herbs and add to the sauce. Season to taste with salt and pepper. Cover the pan and simmer for 30 minutes over low heat. 

3.

Cook the pasta in boiling salted water according to the package directions until al dente. Drain the pasta and arrange on plates. Top the pasta with the tomato sauce. Shave the parmesan cheese over the top and serve.
