500 grams Spaghetti

1 onion
2 garlic cloves
1 chili pepper
200 grams Smoked bacon
2 Tbsps olive oil
100 milliliters dry white wine
2 Tbsps freshly grated Parmesan
freshly ground peppers
2 Tbsps freshly chopped parsley

Preparation steps

Cook the spaghetti in boiling salted water until al dente.

Blanch the tomatoes in boiling water. Remove the tomatoes from the water and shock in an ice water bath. Peel the tomatoes and cut into quarters. Remove the core and finely dice. Rinse and trim the chili. Cut in half and finely dice. Finely dice the bacon. heat the oil in a pan, then sauté the bacon, garlic, onion, and chili for 2-3 minutes. Deglaze with the white wine, add the tomatoes, and simmer for 5-10 minutes. Mix in the parmesan cheese, then season to taste with salt and pepper. Drain the pasta, mix into the pan, and toss to combine. Arrange the pasta on plates.

Garnish the pasta with the parsley, and serve.
