1 kilogram clam
2 shallots
1 garlic clove
3 Tbsps olive oil
150 milliliters dry white wine
400 grams Spaghetti
salt
100 milliliters fish stock
1 bunch freshly chopped parsley

Preparation steps

Rinse clams and trim. Dispose any open shells. Peel shallots and coarsely chop. Peel garlic and chop. Heat oil in a large pan, briefly saute shallots and garlic until translucent and add drained clams. Add white wine to the pan, cover and cook for about 6-8 minutes until clams have opened. Dispose of any closed shells. Drain clams taking care to collect the cooking broth. Remove clam meat from shells and reserve shells for garnish.

Meanwhile, cook pasta in a pot of plenty of boiling salted water until al dente, drain, rinse with cold water and drain again. Boil clams in fish stock, add parsley and simmer all for 3-4 minutes. Season with salt. Add pasta to clams and let stand briefly. To serve, arrange pasta into a nest on serving plates and place shells decoratively next to pasta.
