- ⅜ cup sesame oil
- 1 Red onion (peeled and chopped)
- 2 cloves garlic cloves (peeled and chopped)
- 1 red chili pepper (chopped)
- 1 tsp Cumin
- 1 tsp ground cilantro (/coriander)
- 2 very ripe plantains (peeled and cut into 1 cm/1/2 inch slices)
- 2 ½ cups Chicken broth
- ¼ cup Tamarind paste
- 1 ⅓ cups Coconut milk
- 1 tsp Sea salt
- ½ cup cilantro (/coriander leaves, roughly chopped)
- ½ cup fresh mint (roughly chopped)

Preparation steps

Heat the sesame oil in a large pan and add the red onion, garlic, half of the chili, cumin and coriander. Saute for 5 minutes, stirring continuously so it doesn‘t stick. Add the plantains, broth, tamarind paste and coconut milk and bring to a boil. Turn the heat to a gentle simmer and cook until the plantains am soft, then remove from the heat. Add the salt and purée the soup. Return to the heat and add the rest of the chili. Stir in the coriander and mint just before serving.
