- 3 ⅓ cups floury potatoes (peeled and diced)
- ⅞ cup cream (at least 30% fat)
- ½ cup Crème fraiche
- 1 ¾ cups Camembert (diced)
- Nutmeg
- 2 sprigs parsley (chopped)
- 4 sprigs Chives (chopped)
- 11 ozs frozen Puff pastry (defrosted)
- 1 egg yolk

Preparation steps
1.
Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4 and grease a pie dish.
2.
Cook the potatoes in boiling, salted water for 10-15 minutes.
3.
Mix together the cream, creme fraiche and the Camembert and season with salt, ground black pepper and nutmeg.
4.
Drain the potatoes and mix together with the herbs and place them in the prepared tart tin. Pour the cream-cheese mixture on top.
5.
Roll the puff pastry out onto a floured worked surface and cut to the shape of the tin. Place on top of the the filling and brush with egg yolk. bake for 30-35 minutes until golden brown. Remove from the oven and serve immediately.
