- 3 Tbsps butter
- 12 eggs (beaten)
- 4 Tbsps chopped Fresh herbs (e. g. parsley, chives and chervil)
- 8 slices smoked Salmon
- Spinach

Preparation steps
1.
Heat the butter in an omelette pan until foaming.
2.
Stir the herbs into the eggs and pour 1/4 into the pan.
3.
Quickly stir and shake the pan to distribute the eggs and ensure they cook evenly. When they are almost set, take the pan off the heat.
4.
Fold the omelette, using a spatula to lift one edge and tipping the pan slightly to make it easier to fold over. Slide onto a warm plate.
5.
Proceed with the rest of the eggs equally and top each omelette with smoked salmon and spinach leaves and serve immediately.
