- 8 large eggs
- ¼ cup butter (divided into 4 portions)
- 1 cup sliced ham
- 1 red pepper (seeded and julienned)
- ½ small round lettuce (leaves separated)
- 1 cup button Mushrooms (sliced thinly)

Preparation steps
1.
Lightly beat the eggs with seasoning.
2.
In a large frying pan, heat one-quarter of butter over a medium-high heat.
3.
When it stops foaming add a quarter of the beaten egg and tilt the pan to allow it to start setting.
4.
Use a spatula to push the setting egg toward the centre to allow the uncooked egg to reach the base and set.
5.
Remove from the heat after 1 minute and slide onto a flat plate. Repeat for the remaining omelettes.
6.
Line two of the omelettes with lettuce leaves and top with slices of ham. Line one of the omelettes with the sliced mushrooms, lettuce leaves and slices of ham.
7.
Line the remaining omelette with the remaining lettuce leaves and the julienned red pepper.
8.
Roll the omelettes up into thin cigar shapes and slice at 2 inch intervals. Skewer each piece with a cocktail stick and arrange in lined paper serving trays.
