2 cups all-purpose flour
1 tsp baking soda
¼ tsp salt
½ cup butter
1 ¼ cups soft brown sugar
2 eggs (beaten)
4 overripe Banana (peeled and mashed)
cup Buttermilk (or natural yogurt)
1 tsp vanilla extract

Preparation steps

Heat the oven to 180°C|160°C fan|350°F|gas 4. Grease and base line a loaf tin 20cm x 12.5cm (8in x 5in).
2.
Sieve together the flour, bicarbonate of (baking) soda and salt. Put the butter and sugar into a bowl and beat together until creamy.
3.
Add the eggs, mashed bananas, buttermilk and vanilla extract. Mix well and then fold in the flour. Spoon the mixture into the tin.
4.
Bake in the oven for 45–60 minutes until well risen and golden brown.
