- 14 ozs Tagliatelle
- salt
- 1 onion
- 1 garlic clove
- 2 Tbsps olive oil
- 14 ozs chunky Tomatoes (canned)
- 1 tsp dried oregano
- 10 ozs Comté cheese (or other mild cow's milk cheese)
- 3 ozs pitted, black Olives
- freshly ground peppers
- sugar
- 1 handful Basil

Preparation steps
1.
Cook the pasta in boiling salt water until al dente and drain. Peel and finely chop the onion and garlic. Saute onion and garlic in hot olive oil until translucent.

Add the tomatoes and oregano and allow to simmer for about 10 minutes. Remove from the heat. Crumble half of the cheese and stir in the drained olives. Season with sugar, salt and pepper. Mix in the pasta and allow to cool.
3.
Rinse, shake dry and cut the basil into fine strips. Divide the salad onto plates and garnish with basil. Dice the remaining cheese and place on top before serving.
