- For the cupcakes
- 2 eggs
- ¾ cup self-rising flour
- ½ cup Almond flour
- 1 tsp Baking powder
- ½ cup butter (softened)
- ½ cup sugar
- ½ tsp Almond extract
- 1 Tbsp milk
- For the frosting
- 2 cups powdered sugar
- 2 Tbsps hot water
- ½ tsp Almond extract
- pink Food coloring
- For the decoration
- 1 ½ cups pink Sugar paste
- ½ cup yellow Marzipan
- 1 tsp Vanilla bean
- pink colored sparkling sugar

Preparation steps
1.
For the cupcakes: heat the oven to 190C, 375F, gas 5. Place paper cases in a 12 hole bun tin.
2.
Put all the cake ingredients in a mixing bowl and beat well until smooth.
3.
Spoon the mixture into the paper cases and bake for 15-20 minutes until golden and springy to the touch. Remove from the tin and place on a wire rack to cool.
4.
For the frosting: sift the confectioners' sugar into a bowl and beat in enough water to give a smooth thick frosting. Stir in the almond extract and food colouring until smooth.
5.
Spoon the frosting onto the cakes (reserve a little to attach the flowers )and sprinkle with sparkling sugar crystals.
6.
For the flowers: roll out the sugarpaste and cut out individual petals. Attach the flowers to the cakes with a little frosting.
7.
Knead the marzipan with the vanilla seeds. Roll small pieces of marzipan into tiny balls and place a ball in the centre of each flower and on the cakes. Sprinkle with more sparkling sugar.
