Mixed Decorated Cupcakes
- For the cupcakes
- 2 cups all-purpose flour
- ½ cup caster sugar (superfine)
- 2 tsps Baking powder
- 1 pinch salt
- 1 egg (beaten)
- ⅔ cup milk
- ¼ cup butter (melted)
- 1 tsp vanilla extract
- For the frosting
- 1 ½ cups powdered sugar
- 2 Tbsps hot water
- 2 tsps cocoa powder
- Food coloring (red, green, blue)
For the cupcakes: heat the oven to 190C,400F, gas 5. Place paper cases in a 12 hole bun tin.
Sift the flour, sugar, baking powder and salt into a mixing bowl.
Whisk together the egg, milk, butter and vanilla. Stir into the dry ingredients until combined.
Spoon into the paper cases and bake for about 20 minutes until golden and risen. Cool in the tin for 5 minutes then place on a wire rack to cool.
For the frosting: sift the confectioners' sugar into a bowl and beat in the hot water until smooth.
Divide the mixture into smaller bowls and stir a few drops of your chosen food colouringin to each bowl. For the chocolate frosting, sift in the cocoa powder to 1 bowl and beat well.
Spread the frosting over the cakes and add the decorations before the frosting sets.
