1 ¼ liters Beef broth

Preparation steps

Peel carrots and onion and cut into small cubes. Remove crust from the bread and cut into small cubes.

In a saucepan melt butter and fry bread cubes until golden brown. Add onion and carrot cubes and cook briefly. Dust with the flour, let flour take on color and then deglaze with broth. Stir vigorously so that no lumps form. Allow soup to simmer for 20-25 minutes over medium heat. Season with salt, pepper and nutmeg and serve in preheated soup bowls.
