- 4 Chicken breasts (cut into bite size pieces)
- 2 Tbsps light soy sauce
- 4 Tbsps sesame oil
- 2 Tbsps Rice wine vinegar
- salt
- peppers
- 2 Tbsps sunflower oil
- 1 red pepper (deseeded and finely sliced)
- 8 cups baby Spinach (washed)
- 2 nori Seaweed (leaves)
- ⅔ cup cooked ham (shredded)
- 2 Tbsps Sesame seeds
Preparation steps
1.
Mix the chicken pieces with the soy sauce and allow to marinate for 20 minutes.

Mix the sesame oil and rice wine vinegar, season with salt and pepper and set aside.
3.
Heat the sunflower oil in a wok or frying pan and stir fry the chicken for 3 minutes or until lightly browned.
4.
Mix the spinach with the pepper and toss in the dressing. Add more seasoning if desired.
5.
Carefully toss the chicken with the spinach. Arrange the salad on plates.
6.
Garnish with the ham and seaweed strips, sprinkle with the sesame seeds and serve immediately.
