- 1 small chicken
- 6 Tbsps olive oil
- 1 onion (finely diced)
- 1 garlic clove (finely diced)
- 2 Red Bell pepper
- 2 Tomatoes
- salt
- freshly ground peppers
- 200 grams Paella rice
- 400 milliliters Chicken broth
- 1 bay leaf
- 1 sm can Saffron
- 250 grams shrimp (deveined)
- 800 grams mussels (or mussels)

Preparation steps
1.
Rinse the chicken, pat dry, remove the bones and dice the flesh.
2.
Cut an “X” in the base of the tomatoes, blanch in boiling water, peel, quarter, remove the seeds and chop.
3.
Rinse the peppers, remove the core and seeds and cut into strips.
4.
Rinse the shrimp.
5.
Brown the chicken in a large paella pan in hot oil until golden brown. Add chopped onion and sweat until translucent. Add the chopped garlic, peppers, and tomatoes. Season with salt and pepper.
6.
Add the rice and stir to coat. Mix together the broth, bay leaf and saffron, add to the rice and stir to combine.
7.
Simmer for about 25-30 minutes over low heat, without stirring.
8.
Around 10 minutes before the end of the cooking time, add the seafood. Season to taste and serve.
