- 24 small Scallop
- Samphire (100 grams) (approximately 3 ounces) (also known as sea beans)
- 2 Tbsps butter
- salt
- freshly ground peppers
- 1 pink Grapefruit

Preparation steps
1.
Blanch the samphire in boiling salted water until bright green and tender, shock in ice water then drain.
2.
Peel the grapefruit and cut into segments.
3.
Season the scallops with salt and pepper and sear in hot butter until golden brown.
4.
Add the samphire, season with the salt and pepper and toss to combine. Transfer to serving plates along with the grapefruit. Serve.
