1 small onion (finely chopped)
1 ¼ cups self-rising flour
1 teaspoon Baking powder
½ teaspoon baking soda
1 pinch salt
1 teaspoon paprika
1 teaspoon mustard powder
2 eggs
0.333 cup butter (melted)
cup Buttermilk
1 ½ cups grated, sharp Cheddar cheese
3 ½ ounces cooked, fatty Bacon (cut into small dice)

Preparation steps

1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Grease a 12 hole muffin tin.

Heat the oil in a frying pan and cook the onion for about 5 minutes, until softened but not browned. Remove from the pan and set aside to cool.
3.
Stir together the flour, baking powder, bicarbonate of soda, salt, paprika and mustard powder in a mixing bowl.
4.
Whisk together the eggs, butter and buttermilk, then stir into the flour mixture until just combined.

Mix together the cheese and bacon and reserve 3-4 tablespoonfuls.
6.
Gently stir the bacon and cheese into the mixture with the onion until just combined.
7.
Spoon into the muffin tins and sprinkle with the reserved cheese and bacon. Bake for about 20 minutes, until golden and a skewer inserted into the centre comes out clean. Serve warm.
