- 175 grams Parmesan
- 300 grams Pastry flour
- 1 tsp cream of tartar
- 1 tsp ground paprika
- 2 Tbsps Whipped cream
- 200 grams cold butter
- for garnishing
- 2 egg yolks
- chopped Pistachio
- rough salt
- Caraway
- Poppy seeds
- Sesame seeds
Preparation steps
Finely grate cheese. Sift flour on the work surface. Add baking powder and pepper and mix well, make a well in the center and pour cream into the well. Cut butter into small pieces and arrange around the well. Place cheese on top and knead everything quickly to a smooth dough. Shape into a ball and wrap in plastic wrap, refrigerate for 1 hour.
Divide pastry into 3 parts and roll out each part between two layers of plastic wrap until about 3 mm thin (approximately 0.01 inch). Cut out different shaped cookies with cookie cutter. Mix egg yolks with 2-3 tablespoons of water and brush cookies with the mixture. Sprinkle with chopped pistachios, coarse salt, caraway, poppy or sesame seeds. Arrange on a lined with parchment paper baking sheet and bake in preheated oven at 175°C (approximatley 350°F) for about 10 minutes or until golden. Prepare all cookies in the same manner until all pastry is used. Remove from oven and serve.
