Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Rinse the mint, remove the leaves and drain on a kitchen towel, then finely chop. Separate the eggs and beat the yolks with flour, baking powder, nutmeg, pepper and milk to make a smooth dough. Whip the egg whites with a pinch of salt until stiff. Fold the cheese into the egg yolk mixture, then gently fold in the egg whites. Brush a loaf tin with oil and line with baking paper. Mix the mint into the dough, pour into the loaf pan and brush the top with oil. Bake in the preheated oven for about 50 minutes. Check for doneness with a toothpick. Cool the cake for 5 minutes in the mold, then lift out using the baking paper and cut into slices. Serve while still warm or cold.
