Preparation steps

1.

Finely chop scallions. Cut ham slices lengthwise. Cut bread into rounds, each with a diameter of about 6 cm (approximately 2 1/4 inches). Toast bread rounds in a toaster until lightly browned. Season cheese with salt and pepper and mix until smooth. Transfer cheese to a pastry bag.

2.

Lay a toast round on each plate. Pipe cream cheese onto rounds and top each with a slice of tomato. Place second toast round on cheese and pipe on more cheese. Sprinkle with 3/4 of the scallions. Roll ham loosely, place on sandwiches and top with remaining toast rounds.

3.

Roll edges of sandwiches in coarsely ground pepper. Sprinkle with remaining scallions. Top sandwiches with a dollop of cream cheese and garnish with watercress.
