6 Tbsps Orange juice

500 grams Salmon
2 Tbsps lemon juice
1 bunch Dill
1 bunch parsley

Preparation steps

1.

Rinse cucumber, halve and scrape out seeds with a spoon. Chop pulp finely.

2.

Whisk olive oil with mustard, vinegar and orange juice. Season with salt and pepper.

3.

Add cucumber cubes to the dressing. Finely chop salmon fillet and mix in a bowl with lemon juice, then season with salt and pepper.

4.

Rinse dill and parsley and spread the branches in a star shape on plates.

5.

Place a dollop of salmon tartare in the middle of herbs and drizzle with the cucumber dressing.
