350 grams Puff pastry dough (frozen)

400 grams Salmon
200 milliliters milk
250 grams Ricotta cheese
4 eggs
70 grams Emmentaler cheese (grated)
salt
freshly ground peppers (from the mill)
Nutmeg (freshly grated)
2 Tbsps Chervil (chopped)
2 Tbsps scallions
1 Tbsp parsley (chopped)
Fresh herbs (for garnish)

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Defrost the puff pastry sheets side by side, then stack together and roll out on a floured surface. Grease the mold and line with the puff pastry.

Rinse the salmon, pat dry and chop into small cubes.

Whisk together the milk and ricotta, then add the eggs and the cheese and season well with salt, pepper and nutmeg. Distribute the salmon and herbs over the base of the pastry, pour the egg mixture over htem and bake in the preheated oven until golden brown, about 35-40 minutes. Serve garnished with herbs.
